Veggie Meatballs With Coconut Gravy

Mushroom Sauce Ingredients:

1 Can Organic Coconut Milk (400ml)

200 Grams Mushroom Chopped ( We Use Organic Baby Bella )

2 Tablespoons Water

11/2 Tablespoons Corn Starch

( Use More If You Want Thicker Gravy )

1 Tablespoon Braggs Aminos

1/2 Tablespoon Olive Oil

1 Teaspoon Garlic Powder

1 Teaspoon Oregano

½ Teaspoon Smoked Red Pepper Powder

½ Teaspoon Curry Powder

Instructions

Warm the oil in the pot then put the mushrooms and mix. Add ½ tsp garlic powder and oregano and when your pot is hot, add 1 Tablespoon of Braggs Aminos, mix and wait 3 minutes. Then add coconut milk, ½ tsp garlic powder, ½ tsp smoke red pepper smoke, ½ tsp curry , and the corn starch dissolved in the 2 tbsp of water. Mix over low heat until thick. It can be served with pasta, mashed potatoes, meatballs, rice, or any dish you want.

Buy One Package of Homestyle or Italian Impossible Meatballs and cook according to the instructions on the package. You can then warm your meatballs when your sauce is ready. Stir your Veggie Meatballs With Coconut Gravy and serve.

Baked Golden Potatoes

2 lb. potatoes peeled and cut
1 tsp salt
½ tbsp Amino
½ tsp smoke red pepper powder
½ tsp garlic powder
½ tsp onion powder
1 tbsp olive oil
Juice from ½ lemon
½ tbsp thyme

Instructions
Cook the potatoes until they are not too soft with 1 tsp salt. Remove the water and let cool. In the small bowl mix the oil, amino, all spices except thyme and lemon. Put the potatoes in the Pyrex and brush the potatoes with the spice mix. At the end brush the Thyme. Bake for 20 minutes, 400 degrees F.

We eat a really healthy salad everyday at our dinner ( around 1 pm ) before we have our main course. In the winter, Patricia also likes to make some healthy soup or lentils for our dinner.
