Carrot Cranberry Walnut Cake Ingredients

2 Cups Organic Whole Wheat Flour
2 Cups Shredded Carrots
1 Orange Zest
2/3 Cup Dried Cranberries
2/3 Cup Chopped Walnuts
3 Tablespoons Of Ground Flax Seeds Instead Of 3 Eggs
9 Tablespoons Of Water ( Around 2/3 Cup ) Mixed With Ground Flax Seed
Replace One Egg With 1 Tablespoon of Ground Flax Seed and 3 Tablespoons Of Water
2/3 Cup Pure Maple Syrup
1/2 Cup Olive Oil
1/4 Cup Orange Juice

1 Teaspoon of Alcohol Free Vanilla Extract
1 Teaspoon of Baking Powder
1 Teaspoon of Baking Soda
1/2 Teaspoon of Cinnamon
1/4 Teaspoon of Salt

Carrot Cranberry Walnut Cake Directions

Take all of your dry ingredients and thoroughly mix together in a mixing bowl. Take all of your wet ingredients accept the shredded carrots and mix them together. Now add your wet ingredients into your dry ingredients bowl and mix together and then add the shredded carrots in last and mix the cake batter thoroughly. The last step in making the cake batter is to add optional chopped walnuts and cranberries.

Patricia uses silicon cup cake molds and she does not have to put any oil in the molds to prevent the cup cakes from sticking. Pour your batter into your cup cake molds. Bake at 350 degrees for 20 to 23 minutes. Put a toothpick in the center of one to see if the cake is cooked all the way.
