Vegan Brown Rice Lasagna

Vegan Brown Rice Lasagna is a gluten free pasta dish that can be made with different sauces, layer different vegetables and use spices to make this meal taste great.

We buy the Organic Tinkyada Brown Rice Lasagna from Azure Standard once a month. Here is a list of the other ingredients that my wife Patricia uses to make this wonderful healthy meal. All these ingredients are easily found in your local Costco Grocery section.

Vegan Brown Rice Lasagna Ingredients

1 Package Organic Tinkyada Brown Rice Lasagna

16 Ounces or 450 Grams of Organic Classico Tomato, Herbs & Spices Sauce

8 Ounces or Half A House Foods Organic Tofu, Firm, 16 oz Package

The following list are vegetables that Patricia uses. You can modify this to your preference.

One Medium Eggplant, Thin Sliced

One Medium Zucchini, Thin Sliced

1/2 Pound Organic Brown Mushrooms, Thin Sliced

Spices: Basil, Oregano, Garlic Powder, and Pink Himalayan Sea Salt

Directions:

Preheat your oven to 350 degrees. Brown your Mushrooms with a small amount of Organic Olive Oil in a skillet. Put your spices in a small mixing bowl with a small amount of Organic Olive Oil and stir. Take a kitchen brush and dip it in the bowl. Now brush on the spices and olive oil on your Eggplant and Zucchini. Place your veggies in the oven long enough to soften them.

Cook your Lasagna Noodles for 8 minutes then remove from hot water and lay out on a baking sheet with tongs. Do not over cook.

Take some of your Classico Sauce and spread out on bottom of your Pyrex dish. Use your tongs to layer the Lasagna Noodles in an 8 by 12 inch Pyrex Casserole Dish. Cover your Noodles with a Plant Based Shredded Vegan Cheese that will help the Noodles stay in place.

Now take some of your softened Vegetables and spread out over the Cheese. Repeat the process by pouring some of your Sauce over your layered Noodles until you have used all your Noodles and Vegetables.

Patricia has found plant based cheeses that melt so her recipe is just like the Lasagna I remember our family made when we all ate meat and dairy. We prefer to stay away from animal foods due to health concerns.
