Organic Vegetable Pie Recipe
Crust Ingredients
1 Cup Spelt Flour
1 Cup Unbleached White Flour
1/4 Cup Olive Oil
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
7/8 Cup Warm Water, May Need Little More Or Less Depends On Type Of Flour
Vegetable Pie Ingredients
2 Cups Corn
1 Cup Mushroom Slices
1/8 Cup Red Pepper
8- 10 Olives
2 Cups Zucchini Chopped Into Small Cubes
1 Cup Green Beans Chopped
1 Cup Carrots Chopped Into Small Cubes
1/4 Medium Onion Chopped Into Small Cubes
2 Cloves Of Garlic
1/2 Medium Tomato
1 Teaspoon Olive Oil
1 Tablespoon Braggs Liquid Aminos
Spices ( Basil, Curry, Oregano, Smoked Paprika)
1 Tablespoon Corn Starch
2 Tablespoons Almond Milk
Organic Vegetable Pie Recipe Instructions
1) Mix the flours with baking powder and the salt, in the middle of the flours make a hole and put the oil and mix with the warm water, the water is gradually added, until a soft dough is obtained that does not stick to the hands.
2) Separate the dough into two parts and form two balls and stretch so that there are two disks. One disk will be the pie crust and the other disk will cover the top and sides of your Organic Vegetable Pie Recipe.
3) In a pot, put all the vegetables ( do not put corn starch and almond milk ) and cook. When you see a juice in the pot put the corn starch dissolved in with your two tablespoons of cold almond milk and mix in the pot for 3 minutes. Turn off then cool on your countertop.
4) Put one disk in the 11 inch pie mold then put the vegetables on top. Cover with the other disk and fold over the sides all the way around your pie mold.
5) Preheat the oven 350 degrees and bake the pie for 20 minutes.
