Vegan Chocolate Cake

Vegan Chocolate Cake Ingredients

1 and 3/4 Cups Organic Whole Wheat Flour

2 Cups Sugar

( We Use 1 Cup of Pure Maple Syrup & 2 Teaspoons of Pure Via Stevia Concentrate Drops ) You Could Also Use Honey Or Agave

1 and 1/2 Teaspoon of Baking Powder

1 and 1/2 Teaspoon Baking Soda

3/4 Cup Hershey’s Cocoa

( We Like Carob Powder ) Carob Is a Healthy Alternative to Cocoa. Carob Is Caffeine Free, Low In Fat and Sodium, High In Fiber, Has Minerals and Antioxidants.

1 Teaspoon Salt

Vegan Chocolate Cake( We Use Sea Salt Or Pink Himalayan Salt )

2 Eggs

( We Use Egg Replacer Powder Instead Of Eggs )

1 Cup Milk

( We Use Almond Milk )

1/2 Cup Vegetable Oil

( We Use Organic Coconut Oil )

2 Teaspoons Of Vanilla Extract

1 Cup Of Boiling Water

Directions For Vegan Chocolate Cake

Heat your oven to 350 degrees Farenheit Or 175 Celsius. Grease and lightly flour two 9 inch round baking pans. You could also just use a loaf baking pan if you wanted to like I did in the picture above.

Combine your dry ingredients in a large mixing bowl. Add your eggs, milk, oil and vanilla. Beat with a mixer on medium speed for 2 minutes. Stir in the boiling water. The batter will be thin. Pour into your pans.

Bake for 30-35 minutes or until a wooden toothpick inserted in the middle comes out clean.

Cool for 10 minutes.  Remove from pan and place on a wire rack so the cake is raised up off your counter a little. This will help the cake cool and settle. We leave ours out over night if you make the cake in the evening. Put in an air tight container and enjoy for at least 4 days.

You can make a healthy frosting also.

Chocolate Frosting

1/2 Cup Earth Balance Vegan Soy Spread

2/3 Cup Carob Powder

2 Cups Panela Organic Cane Sugar

1/3 Cup Almond Milk

1 Teaspoon Vanilla Extract

Directions:

Melt the Soy Butter. Stir in the Carob Powder. Now add half the sugar then half the milk and alternate while you stir the ingredients until you have all mixed together. If you need the frosting to be more moist, add a little more almond milk. Stir in the vanilla extract and then you can frost your cake.
