Organic Carrot and Tomato Soup Ingredients
1 Medium Size Carrot
2 Cloves Garlic
1/2 Small Red Onion
1 Small Red Potato to Make the Soup Creamy
1 Can Costco Organic Roma Tomatoes Or 1 Pound ( 453 Grams ) Natural Roma
1/4 Red Pepper Chopped
1/4 Cup Organic Coconut Milk From Can
1/2 Tablespoon Organic Olive Oil
1 Tablespoon Nutritional Yeast Flakes
1 Teaspoon Basil
1 Teaspoon Thyme
1 Teaspoon Oregano
1 Teaspoon Himalayan Pink Salt
1/2 Teaspoon Smoked Paprika
Directions
Put 1/2 Tablespoon Olive Oil in a pot and cut up all your vegetables: carrot, garlic, onion, potato, pepper in a pot, cover with pure water and boil. When the soup starts to boil, put your spices and salt. Cook 10 minutes then turn off. Let it cool down. Now add the coconut milk at the end then put in your VitaMix or BlenTec or blender.
You can now warm up your puree and serve 2 people with this amount of healthy soup. Enjoy and comment about how you like this soup.
This soup is healthier because you are making it from all natural ingredients and has much less sodium than a can of tomato soup that many people buy in the market. My wife Patricia made sure to write that the potato makes the soup creamy similar to what corn starch does.
